A5 Japanese Wagyu: Miyazaki and Kagoshima

Every Japanese Wagyu cut on the menu is A5, the top grade from the Japan Meat Grading Association: "A" is the highest yield grade and "5" the highest quality grade, which requires a Beef Marbling Standard score of 8 to 12 (grading guide). All cuts are served in 120g portions.

  • First visit: start with the ★ Chef's Recommendations: A5 Miyazaki Striploin, Gyutan Negi Shio and Hyogo Oyster, finished with Ikura Wagyu Rice.

  • Comparing Wagyu: order one A5 Miyazaki cut and one A5 Kagoshima cut of the same type (for example, both striploins) and grill them side by side.

  • Best value Wagyu: A5 Kagoshima Rib Finger ($68.90) is the most affordable A5 cut, and the Australian MS7/8 cuts are $39.90.

  • Balance the richness: add Sanchu lettuce, kimchi or namul between cuts, and a vegetable or mushroom platter for the grill.

  • Family meal: pair Kurobuta pork, chicken and seafood with a kids' bento.

The best yakiniku nights rarely go to plan. Someone insists on "just one more" plate of Wagyu, another discovers they love tongue, and the table slowly fills with empty plates and better stories. Ordering à la carte keeps the night open like that, built around what your group is craving rather than a fixed list. Whether it's a quick dinner for two or a long catch-up with family, it's a meal that feels like yours.
